Grape composition: 70% Grenache, 10% Syrah, 10% Mourvedre, 10% blend of Counoise, Cinsaut, Terret Noir, Vacccarese, Clairette and Bouboulenc.
Aroma: Red and black fruit bouquet, cherries, blackberries, hints of garrigue, liquorice and spice. Uncork an hour before serving so that the wine will open up.
Food pairing: Game, red meats, traditional French cuisine, baked lamb with rosemary, charcuterie such as parma ham, spicy sausage, cheeses, asian dishes such as peking duck.

"Looking at the 2012, all of which were still in barrel at the time of this tasting, the 2012 possesses the classic perfume and elegance of the estate, with sweet kirsch, strawberry, spice, garrigue and candied flowers all emerging from the glass. Medium to full-bodied, supple and beautifully textured, with fine tannin, it should easily be outstanding and have over a decade of longevity."
