Product Overview

Pedigree:  Ethereal Red Burgundy from the Rapet family that has been crafting beautiful wines from around the Hill of Corton since 1765. The Domaine comprises 20 hectares in the villages of Pernand-Vergelesses, Aloxe-Corton, Savigny-les-Beaune and Beaune. The various climats of Corton offer, for me personally, great value. For those of us who appreciate gentleness and subtlety, perfumed bouquet and a silky mouthfeel in a slightly less forceful package, Corton offers incomparable value, somehow offering everything at a lower price. Coupled with this is the winemaking experience and sensitivity of Rapet and you have transcendent magic! This cuvee is sourced from three climats within Aloxe-Corton; Les Boutieres, Les Citernes and Les Combes. The gently sloping vineyards have deep ferruginous soil allowing for excellent drainage. 
Grape Varieties: 100% Pinot Noir
Vintage: 2015 - a fine vintage in Burgundy.

Winemaking
Three generations of the Rapet family are involved in all aspects of running the Domaine. Care of the Domaine's vineyards is of utmost importance allowing perfect control of yields to facilitate sublime expressions of their terroirs. Fermentation lasts about 15 days with gentle pigeage (punch downs). The wine is matured in French oak barrels, 20% of which are new.
Alcohol: 13%

Tasting Notes:
Color: Beautiful, pale ruby, pale cherry hues. 
Nose: Hints of forest floor with spiciness, some minerality and savory undertones. Delicate cherry perfume slowly fills the glass as you agitate it. .
Palate: Lovely balance of fruit, acid and tannin well integrated with subtle oak. Silky mouthfeel.  Finish is long, harmonious, seemingly soft because of the mouthfeel but with adequate structure, palate authority and backbone. A complete wine which goes beautifully with food but can also be savored by itself. 
Serving Temperature: 65° F - 70° F
Food Pairing: Pair with squab, lamb and perhaps wild caught salmon. Peking duck will be heavenly.
