Product Overview
Winemaking: Grapes are harvested by hand. Harvesting takes place in September. Handling is bold enough to extract Cabernet character and hallmark tannins but ever mindful of expressing the terroir and the elegance which befit this noble variety and excellent site. The wine is aged for 15 months in primarily neutral French and second fill American barrels.
Tasting Notes:
Color: Ruby red, garnet, with ruddy earth tones at the rim, showing the beginning of evolution.
Nose: The nose is true to the variety; blackcurrant, black cherry, a hint of bay leaf and almond.
Palate: The characteristics on the nose carry forward into the wine. Again, typical Cabernet Sauvignon character; blackcurrants, deliciously savory without being herbaceous, and a long, structured finish. The firmness of Cabernet tannins is evident but they are ripe, well-rounded and tight grained. The finish is grippy and persistent but fresh and elegant throughout.
Alcohol is 13.5%.
Serving Temperature: 60° F - 62° F
